The good news is that we have pork available now.
The pigs have been slow grown
and are free range. They have received no medication other than what
has been necessary. We use the
abattoir at Southern Traditional Meats Farm near Henfield in West Sussex and the meat is butchered
on our farm. We used to have Saddleback pigs but now have
Oxford Sandy and Blacks. Neither
is a a
modern style of pig. It has more fat than one would get normally from a supermarket
but the benefit is a far superior taste and the most wonderful crackling.
